Ingredients:

  • 1 cup (240ml) whole milk
  • 1 ½ cups (300g) granulated sugar
  • 1/4 teaspoon (1.5g) salt
  • 4 tablespoons (57g) unsalted butter, softened
  • 2 teaspoons (10ml) pure vanilla extract
  • 3 tablespoons (30g) all-purpose flour

Instructions:

  1. In the saucepan, whisk together the milk, sugar, salt, and flour until smooth, ensuring no lumps remain.
  2. Place the saucepan over medium heat and cook, stirring constantly with the whisk, until the mixture thickens to a pudding-like consistency. It should coat the back of a spoon. This takes about 5-7 minutes. Watch carefully to avoid scorching!
  3. Remove the saucepan from the heat and stir in the softened butter and vanilla extract until fully incorporated.
  4. Pour the frosting into a heatproof bowl and cover the surface directly with plastic wrap (this prevents a skin from forming). Let it cool completely to room temperature, about 1 hour.
  5. Once cooled, use an electric mixer (either stand or hand mixer) to whip the frosting until light and fluffy, about 3-5 minutes.
