Ingredients:
- 1/2 cup (45g) old-fashioned rolled oats
- 1 cup (240ml) water or unsweetened almond milk
- 1/2 cup (120ml) whole milk
- 1 pinch sea salt
- 1 large egg
- 1/2 tsp pure vanilla extract
- 1 tbsp maple syrup
- 1/4 tsp ground cinnamon
Instructions:
- Combine 1/2 cup (45g) old-fashioned rolled oats, 1 cup (240ml) water (or almond milk), and 1/2 cup (120ml) whole milk in your saucepan with a pinch of sea salt.
- Bring the mixture to a gentle boil over medium high heat, then immediately drop the heat to low.
- Cook for about 5-7 minutes, stirring occasionally. Stop when the oats are tender but still have a bit of slosh to the liquid.
- While the oats simmer, whisk 1 large egg, 1 tbsp maple syrup, 1/2 tsp vanilla, and 1/4 tsp cinnamon in a small bowl. Whisk until no streaks of egg white remain.
- Take a small spoonful of the hot liquid from the oat pan and whisk it into your egg mixture. Repeat this twice.
- Pour the tempered egg mixture into the saucepan while whisking the oats constantly.
- Continue to cook on low for another 2-3 minutes. Cook until the mixture coats the back of a spoon and looks glossy.
- Remove from heat and let it sit for 60 seconds.
- Pour into a bowl and top with fresh fruit or a splash of cold milk for contrast.
