Ingredients:

  • 1 medium head of cauliflower (about 2-3 cups riced)
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • Selected toppings (pepperoni, bell peppers, mushrooms, spinach, etc.)

Instructions:

  1. Rinse and dry the cauliflower. Remove stems and leaves, and chop into florets. Process in food processor until riced.
  2. Microwave the riced cauliflower for 5-6 minutes until tender. Let it cool slightly.
  3. In a bowl, combine cooked cauliflower, egg, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Mix until well incorporated.
  4. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper. Spread the cauliflower mixture onto the baking sheet, shaping it into a pizza crust about 1/4 inch thick. Bake crust for 12-15 minutes until golden brown.
  5. Remove the crust from the oven. Spread pizza sauce over the crust. Sprinkle shredded mozzarella cheese and add selected toppings.
  6. Return the pizza to the oven. Bake for an additional 8-10 minutes until the cheese is bubbly and slightly golden.
  7. Let cool for a few minutes, slice, and serve hot.
