Ingredients:
- 1 medium head of cauliflower (about 2-3 cups riced)
- 1 large egg
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Selected toppings (pepperoni, bell peppers, mushrooms, spinach, etc.)
Instructions:
- Rinse and dry the cauliflower. Remove stems and leaves, and chop into florets. Process in food processor until riced.
- Microwave the riced cauliflower for 5-6 minutes until tender. Let it cool slightly.
- In a bowl, combine cooked cauliflower, egg, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper. Mix until well incorporated.
- Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper. Spread the cauliflower mixture onto the baking sheet, shaping it into a pizza crust about 1/4 inch thick. Bake crust for 12-15 minutes until golden brown.
- Remove the crust from the oven. Spread pizza sauce over the crust. Sprinkle shredded mozzarella cheese and add selected toppings.
- Return the pizza to the oven. Bake for an additional 8-10 minutes until the cheese is bubbly and slightly golden.
- Let cool for a few minutes, slice, and serve hot.
