Ingredients:
- 4 cups ripe watermelon, cubed (approximately 600g)
- 1 cup feta cheese, crumbled (approximately 150g)
- 1/2 cup fresh mint leaves, roughly chopped (approximately 15g)
- 1 tablespoon extra-virgin olive oil (15ml)
- Juice of 1 lime (about 2 tablespoons or 30ml)
- Salt and black pepper to taste
Instructions:
- Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
- Crumble the feta cheese over the watermelon cubes. Add the roughly chopped fresh mint leaves.
- In a separate small bowl, whisk together olive oil, lime juice, salt, and black pepper.
- Gently pour the dressing over the watermelon, feta, and mint mixture. Toss everything lightly to combine, ensuring the watermelon is coated without mush.
- Transfer salad onto a serving platter or bowl. Serve immediately or chill for a few minutes for extra refreshment.
