Ingredients:

  • 4 cups ripe watermelon, cubed (approximately 600g)
  • 1 cup feta cheese, crumbled (approximately 150g)
  • 1/2 cup fresh mint leaves, roughly chopped (approximately 15g)
  • 1 tablespoon extra-virgin olive oil (15ml)
  • Juice of 1 lime (about 2 tablespoons or 30ml)
  • Salt and black pepper to taste

Instructions:

  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Crumble the feta cheese over the watermelon cubes. Add the roughly chopped fresh mint leaves.
  3. In a separate small bowl, whisk together olive oil, lime juice, salt, and black pepper.
  4. Gently pour the dressing over the watermelon, feta, and mint mixture. Toss everything lightly to combine, ensuring the watermelon is coated without mush.
  5. Transfer salad onto a serving platter or bowl. Serve immediately or chill for a few minutes for extra refreshment.
