Ingredients:
- 6 oz (170 g) white chocolate, chopped
- 2 tbsp (30 ml) unsalted butter
- 1 cup (240 ml) heavy cream, cold
- 2 large eggs, separated
- 2 tbsp (25 g) granulated sugar
- 1 tsp (5 ml) vanilla extract
- Pinch of salt
- Fresh berries (e.g., raspberries, strawberries) for garnish
- Whipped cream for garnish
- Mint leaves (optional) for garnish
Instructions:
- Place white chocolate and butter in a heatproof bowl. Set over a double boiler (or microwave in 20-second intervals) until melted and smooth.
- In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add sugar, continuing to whisk until stiff peaks form.
- In another bowl, whip the cold heavy cream until soft peaks form. Add vanilla extract and whisk until combined.
- Gently fold egg yolks into the melted white chocolate mixture until fully incorporated. Gradually fold in the whipped cream, followed by the whipped egg whites, ensuring not to deflate the mixture.
- Spoon the mousse into serving cups or bowls. Refrigerate for at least 30 minutes to set.
- Garnish with fresh berries, a dollop of whipped cream, and mint leaves if desired. Enjoy your dreamy mousse delight!
