Ingredients:
- 2 lbs (900g) boneless, skinless chicken thighs
- 2 large lemons (zested and juiced)
- 4 cloves of garlic, minced
- 1 tsp (5g) dried oregano
- 1 tsp (5g) dried thyme
- 1 tsp (5g) salt
- ½ tsp (2.5g) black pepper
- ¼ cup (60ml) chicken broth or white wine
- 2 tbsp (30ml) olive oil
- Fresh parsley, for garnish (optional)
Instructions:
- Season the chicken thighs with salt, pepper, oregano, and thyme.
- Zest the lemons and then juice them, reserving both for later use.
- In a bowl, mix lemon juice, zest, minced garlic, and olive oil.
- Place the seasoned chicken in the slow cooker and pour the lemon mixture over the top.
- Pour in the chicken broth or white wine around the chicken.
- Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours. Cook until the chicken is tender.
- Garnish with fresh parsley and serve warm.
