Ingredients:

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 2 large lemons (zested and juiced)
  • 4 cloves of garlic, minced
  • 1 tsp (5g) dried oregano
  • 1 tsp (5g) dried thyme
  • 1 tsp (5g) salt
  • ½ tsp (2.5g) black pepper
  • ¼ cup (60ml) chicken broth or white wine
  • 2 tbsp (30ml) olive oil
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Season the chicken thighs with salt, pepper, oregano, and thyme.
  2. Zest the lemons and then juice them, reserving both for later use.
  3. In a bowl, mix lemon juice, zest, minced garlic, and olive oil.
  4. Place the seasoned chicken in the slow cooker and pour the lemon mixture over the top.
  5. Pour in the chicken broth or white wine around the chicken.
  6. Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours. Cook until the chicken is tender.
  7. Garnish with fresh parsley and serve warm.
