Ingredients:

  • 1 tbsp vegetable oil (15 ml)
  • 1/2 lb ground pork (227g)
  • 1 small yellow onion, finely diced (about 1 cup, 150g)
  • 2 cloves garlic, minced (about 2 tsp)
  • 1 inch ginger, peeled and minced (about 1 tbsp)
  • 1 cup shredded cabbage (100g)
  • 1 cup shredded carrots (100g)
  • 1/2 cup shredded coleslaw mix (50g) (optional)
  • 2 tbsp soy sauce (30 ml)
  • 1 tbsp oyster sauce (15 ml)
  • 1 tsp sesame oil (5 ml)
  • 1/2 tsp ground ginger
  • 1/4 tsp white pepper
  • 1 tbsp cornstarch (10g)
  • 2 tbsp water (30 ml)
  • Salt to taste
  • 8 egg roll wrappers
  • 1 large egg, beaten

Instructions:

  1. Heat oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned.
  2. Add onion, garlic, and ginger to the skillet. Cook until softened. Add cabbage, carrots, and coleslaw mix (if using). Cook until slightly softened but still crisp-tender.
  3. Stir in soy sauce, oyster sauce, sesame oil, ground ginger, and white pepper. Taste and adjust seasoning with salt as needed.
  4. In a small bowl, whisk together cornstarch and water to create a slurry. Pour the slurry into the skillet and cook, stirring constantly, until the sauce thickens slightly. Remove from heat and let cool slightly.
  5. Place an egg roll wrapper on a clean surface with one point facing you. Place about 1/4 cup of filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides. Tightly roll up the egg roll to enclose the filling, leaving about 1 inch of the top corner exposed. Brush the exposed corner with beaten egg and seal tightly. Repeat with remaining wrappers and filling.
  6. Preheat your air fryer to 375°F (190°C).
  7. Lightly brush the egg rolls with vegetable oil or spray with cooking spray. Place egg rolls in the air fryer basket in a single layer (work in batches if necessary). Air fry for 6-8 minutes per side, or until golden brown and crispy. Ensure the internal temperature is 165°F (74°C).
  8. Remove the air fryer egg rolls from the air fryer and let cool slightly before serving.
