Ingredients:
- 1 cup (120g) rolled oats
- 1 cup (240ml) milk
- 1 large egg
- 1 ripe banana, mashed (about 1/2 cup)
- 2 tablespoons (30ml) vegetable oil
- 1/2 cup (60g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon (optional)
Instructions:
- In a large bowl, whisk together oats, milk, egg, mashed banana, and oil.
- In a separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon (if using).
- Gently fold the dry ingredients into the wet ingredients until just combined. Don't overmix!
- Heat a lightly oiled non-stick frying pan or griddle over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve warm with your favourite toppings.
