Ingredients:

  • 1 cup (120g) rolled oats
  • 1 cup (240ml) milk
  • 1 large egg
  • 1 ripe banana, mashed (about 1/2 cup)
  • 2 tablespoons (30ml) vegetable oil
  • 1/2 cup (60g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon (optional)

Instructions:

  1. In a large bowl, whisk together oats, milk, egg, mashed banana, and oil.
  2. In a separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon (if using).
  3. Gently fold the dry ingredients into the wet ingredients until just combined. Don't overmix!
  4. Heat a lightly oiled non-stick frying pan or griddle over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve warm with your favourite toppings.
