Ingredients:

  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted, plus extra for greasing the pan
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed (about 1 cup)
  • Maple Syrup (optional)

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, vanilla extract, and mashed banana.
  3. Gently pour the wet ingredients into the dry ingredients. Stir until just combined. A few lumps are okay; overmixing will result in tough pancakes.
  4. Heat a lightly greased griddle or non-stick frying pan over medium heat. The griddle is ready when a drop of water sizzles and evaporates quickly.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbles appear on the surface. Flip carefully with a spatula.
