Ingredients:
- 1/2 cup olive oil
- 1/4 cup fresh lime juice
- 2 tbsp honey
- 1/2 cup fresh cilantro, finely chopped
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 lbs boneless skinless chicken thighs
Instructions:
- Whisk together the olive oil, lime juice, honey, fresh cilantro, garlic, cumin, smoked paprika, salt, and black pepper in a mixing bowl.
- Pat the chicken thighs dry with paper towels and toss them in the marinade until fully coated.
- Place the marinated chicken in the refrigerator for at least 30 minutes (up to 4 hours).
- Cook the chicken using your preferred method (grill, cast iron skillet, or air fryer) until the internal temperature reaches 165°F (74°C).
- Transfer the chicken to a plate and let it rest for 5 minutes before serving to allow juices to redistribute.
