Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp honey
  • 1/2 cup fresh cilantro, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs boneless skinless chicken thighs

Instructions:

  1. Whisk together the olive oil, lime juice, honey, fresh cilantro, garlic, cumin, smoked paprika, salt, and black pepper in a mixing bowl.
  2. Pat the chicken thighs dry with paper towels and toss them in the marinade until fully coated.
  3. Place the marinated chicken in the refrigerator for at least 30 minutes (up to 4 hours).
  4. Cook the chicken using your preferred method (grill, cast iron skillet, or air fryer) until the internal temperature reaches 165°F (74°C).
  5. Transfer the chicken to a plate and let it rest for 5 minutes before serving to allow juices to redistribute.
