Ingredients:

  • 1/2 cup (120ml) mayonnaise, full-fat, good quality
  • 2-3 cloves garlic, minced (approx. 1 tablespoon)
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1 teaspoon (5ml) Dijon mustard
  • 1/4 teaspoon (1.25ml) sea salt, or to taste
  • 1/8 teaspoon (0.6ml) black pepper, freshly ground, or to taste
  • Optional: 1-2 tablespoons (15-30ml) extra virgin olive oil

Instructions:

  1. In a blender or food processor, combine the mayonnaise, garlic (minced or roasted), lemon juice, Dijon mustard, salt, and pepper.
  2. Process until smooth and well combined.
  3. With the motor running, slowly drizzle in the optional olive oil (if using) until the aioli reaches your desired consistency.
  4. Taste and adjust seasonings (salt, pepper, lemon juice) as needed.
  5. Transfer to a jar or container and refrigerate for at least 30 minutes to allow the flavors to meld.
