Ingredients:
- 1/2 cup (120ml) mayonnaise, full-fat, good quality
- 2-3 cloves garlic, minced (approx. 1 tablespoon)
- 1 tablespoon (15ml) lemon juice, freshly squeezed
- 1 teaspoon (5ml) Dijon mustard
- 1/4 teaspoon (1.25ml) sea salt, or to taste
- 1/8 teaspoon (0.6ml) black pepper, freshly ground, or to taste
- Optional: 1-2 tablespoons (15-30ml) extra virgin olive oil
Instructions:
- In a blender or food processor, combine the mayonnaise, garlic (minced or roasted), lemon juice, Dijon mustard, salt, and pepper.
- Process until smooth and well combined.
- With the motor running, slowly drizzle in the optional olive oil (if using) until the aioli reaches your desired consistency.
- Taste and adjust seasonings (salt, pepper, lemon juice) as needed.
- Transfer to a jar or container and refrigerate for at least 30 minutes to allow the flavors to meld.
