Ingredients:
- 1 cup (120 g) all-purpose flour
- 2 tablespoons (25 g) granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (240 ml) buttermilk (or soured milk)
- 1 large egg
- 2 tablespoons (30 g) unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix buttermilk, egg, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined; a few lumps are fine.
- Heat a non-stick skillet or griddle over medium heat; lightly grease with butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface and the edges look set (about 2-3 minutes).
- Flip and cook for another 1-2 minutes until golden brown.
- Stack the pancakes and serve warm with your favourite toppings.
