Ingredients:

  • 3 pounds (1.36 kg) yams, peeled and cut into 1-inch cubes
  • 2 tablespoons (30 ml) unsalted butter, melted
  • 1/2 cup (113 g) unsalted butter
  • 3/4 cup (150 g) packed light brown sugar
  • 1/4 cup (60 ml) maple syrup
  • 1/4 cup (60 ml) water
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/2 teaspoon (2.5 ml) ground nutmeg
  • 1/4 teaspoon (1.25 ml) ground ginger
  • Pinch of salt
  • 1/2 teaspoon (2.5 ml) vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C). Peel and cube the yams. Toss with melted butter in a large bowl.
  2. Spread the yams evenly in the baking dish.
  3. In a saucepan, melt butter over medium heat. Add brown sugar, maple syrup, water, cinnamon, nutmeg, ginger, and salt. Whisk until smooth and the sugar is dissolved. Bring to a simmer.
  4. Pour the glaze evenly over the yams in the baking dish.
  5. Bake uncovered for 45-55 minutes, or until yams are tender and the glaze is thick and bubbly. Stir occasionally to ensure even coating.
  6. Stir in vanilla extract. Let cool slightly before serving. Garnish with chopped pecans (optional).
