Ingredients:
- 3 pounds (1.36 kg) yams, peeled and cut into 1-inch cubes
- 2 tablespoons (30 ml) unsalted butter, melted
- 1/2 cup (113 g) unsalted butter
- 3/4 cup (150 g) packed light brown sugar
- 1/4 cup (60 ml) maple syrup
- 1/4 cup (60 ml) water
- 1 teaspoon (5 ml) ground cinnamon
- 1/2 teaspoon (2.5 ml) ground nutmeg
- 1/4 teaspoon (1.25 ml) ground ginger
- Pinch of salt
- 1/2 teaspoon (2.5 ml) vanilla extract
Instructions:
- Preheat oven to 375°F (190°C). Peel and cube the yams. Toss with melted butter in a large bowl.
- Spread the yams evenly in the baking dish.
- In a saucepan, melt butter over medium heat. Add brown sugar, maple syrup, water, cinnamon, nutmeg, ginger, and salt. Whisk until smooth and the sugar is dissolved. Bring to a simmer.
- Pour the glaze evenly over the yams in the baking dish.
- Bake uncovered for 45-55 minutes, or until yams are tender and the glaze is thick and bubbly. Stir occasionally to ensure even coating.
- Stir in vanilla extract. Let cool slightly before serving. Garnish with chopped pecans (optional).
