Ingredients:

  • 1.5 lbs (680g) Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5ml) garlic powder
  • 1 teaspoon (5ml) onion powder
  • 1/2 teaspoon (2.5ml) dried rosemary, crushed
  • 1/2 teaspoon (2.5ml) dried thyme
  • 1/4 teaspoon (1.25ml) paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Wash and cube the potatoes into roughly equal sizes.
  2. In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, rosemary, thyme, paprika, salt, and pepper. Ensure the potatoes are evenly coated.
  3. Preheat the air fryer (if required). Arrange the potatoes in a single layer in the air fryer basket, making sure not to overcrowd. You may need to cook in batches.
  4. Air fry at 400°F (200°C) for 20-25 minutes, flipping the potatoes halfway through. Cook until golden brown and crispy on the outside and tender on the inside.
  5. Remove from the air fryer and garnish with fresh parsley (if using). Serve immediately.
