Ingredients:
- 1 lb (450g) Brussels sprouts, trimmed and halved
- 4 oz (115g) bacon, cut into small pieces
- 2 tbsp (30ml) olive oil
- 2 tbsp (30ml) honey
- 2 tbsp (30ml) balsamic vinegar
- Salt and pepper, to taste
- Optional: ¼ cup (15g) grated Parmesan cheese, for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss Brussels sprouts with olive oil, salt, and pepper.
- In a large skillet, cook bacon over medium heat until crispy; remove and drain on paper towels.
- Spread Brussels sprouts evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through, until golden brown and slightly crispy.
- While sprouts roast, whisk together honey and balsamic vinegar in a small bowl.
- Once sprouts are done, remove from the oven, combine with cooked bacon, and drizzle with the honey-balsamic mix.
- Toss to combine and serve warm, optionally garnished with Parmesan cheese.
