Ingredients:

  • 1 lb (450g) Brussels sprouts, trimmed and halved
  • 4 oz (115g) bacon, cut into small pieces
  • 2 tbsp (30ml) olive oil
  • 2 tbsp (30ml) honey
  • 2 tbsp (30ml) balsamic vinegar
  • Salt and pepper, to taste
  • Optional: ¼ cup (15g) grated Parmesan cheese, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss Brussels sprouts with olive oil, salt, and pepper.
  3. In a large skillet, cook bacon over medium heat until crispy; remove and drain on paper towels.
  4. Spread Brussels sprouts evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through, until golden brown and slightly crispy.
  5. While sprouts roast, whisk together honey and balsamic vinegar in a small bowl.
  6. Once sprouts are done, remove from the oven, combine with cooked bacon, and drizzle with the honey-balsamic mix.
  7. Toss to combine and serve warm, optionally garnished with Parmesan cheese.
