Ingredients:
- 2 tablespoons finely chopped fresh mint leaves
- Juice of 1 lime
- Salt and freshly ground black pepper, to taste
- 4 tablespoons olive oil
- 4 oz (100g) mixed salad leaves (pea shoots are recommended)
- 8 slices prosciutto, each torn into 3-4 pieces
- 8 oz (225g) fresh mozzarella balls (2 small/medium balls), torn into bite-sized pieces
- 3 ripe peaches, each sliced into 8 wedges
- 1 small red chili, thinly sliced (remove seeds for less heat)
Instructions:
- In a jug or jar, combine the chopped mint, lime juice, salt, pepper, and olive oil. Whisk or shake vigorously to emulsify. Taste and adjust seasoning as needed.
- Divide the mixed salad leaves evenly among the 4 serving plates.
- Arrange the prosciutto pieces, mozzarella chunks, and peach slices attractively on top of the salad leaves.
- Drizzle the mint-lime dressing over each salad. Scatter the chili slices over the top.
