Ingredients:

  • 2 tablespoons finely chopped fresh mint leaves
  • Juice of 1 lime
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons olive oil
  • 4 oz (100g) mixed salad leaves (pea shoots are recommended)
  • 8 slices prosciutto, each torn into 3-4 pieces
  • 8 oz (225g) fresh mozzarella balls (2 small/medium balls), torn into bite-sized pieces
  • 3 ripe peaches, each sliced into 8 wedges
  • 1 small red chili, thinly sliced (remove seeds for less heat)

Instructions:

  1. In a jug or jar, combine the chopped mint, lime juice, salt, pepper, and olive oil. Whisk or shake vigorously to emulsify. Taste and adjust seasoning as needed.
  2. Divide the mixed salad leaves evenly among the 4 serving plates.
  3. Arrange the prosciutto pieces, mozzarella chunks, and peach slices attractively on top of the salad leaves.
  4. Drizzle the mint-lime dressing over each salad. Scatter the chili slices over the top.
