Ingredients:

  • 2 (6-ounce/170g each) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 lemon, sliced into thin rounds
  • Optional: Fresh herbs (dill, parsley, thyme) for garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet (or line with parchment paper).
  2. Pat the salmon fillets dry with paper towels. Place fillets on the prepared baking sheet.
  3. In a small bowl, whisk together olive oil, salt, and pepper. Brush the mixture evenly over the salmon fillets.
  4. Arrange lemon slices on top of each salmon fillet.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C). Use an instant-read thermometer inserted into the thickest part of the fillet to check.
  6. Remove from oven and let rest for a couple of minutes. Garnish with fresh herbs (if using) and serve immediately.
