Ingredients:
- 2 (6-ounce/170g each) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper, freshly ground
- 1 lemon, sliced into thin rounds
- Optional: Fresh herbs (dill, parsley, thyme) for garnish
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet (or line with parchment paper).
- Pat the salmon fillets dry with paper towels. Place fillets on the prepared baking sheet.
- In a small bowl, whisk together olive oil, salt, and pepper. Brush the mixture evenly over the salmon fillets.
- Arrange lemon slices on top of each salmon fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C). Use an instant-read thermometer inserted into the thickest part of the fillet to check.
- Remove from oven and let rest for a couple of minutes. Garnish with fresh herbs (if using) and serve immediately.
