Ingredients:

  • 1 lb (450g) Ground Beef (80/20 blend)
  • 1 tsp (5g) Kosher Salt
  • ½ tsp (2.5g) Black Pepper, freshly ground
  • 2 Brioche Buns, toasted
  • 2 slices American Cheese
  • 1/4 cup thinly sliced White Onion
  • 2 tbsp Dill Pickle Chips, halved
  • 2 tbsp Burger Sauce
  • 2 tbsp Mayonnaise
  • 1 tbsp Ketchup
  • 1 tsp Yellow Mustard
  • 1/2 tsp Sweet Pickle Relish
  • 1/4 tsp Garlic Powder
  • Pinch of Paprika

Instructions:

  1. Gently form the ground beef into two loose balls. Season generously with salt and pepper.
  2. In a small bowl, combine all sauce ingredients and whisk until smooth. Set aside.
  3. Place the cast iron skillet or griddle over medium-high heat. It should be screaming hot – almost smoking.
  4. Place one beef ball on the hot skillet. Immediately cover with parchment paper. Using a heavy spatula, firmly press down, smashing it thinly (¼ inch thick). Hold the spatula for 10-15 seconds.
  5. Cook for 2-3 minutes per side, undisturbed, until the edges are deeply browned and crispy. Scrape the burgers off and flip.
  6. Immediately add a slice of cheese to each patty.
  7. Add a splash of water to the skillet (away from patties) and cover quickly with a lid to steam the cheese.
  8. Spread burger sauce on the toasted buns. Add the burger patties, onion slices and pickles. Top with the other half of the bun and serve immediately.
