Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon garlic powder (5 grams)
- 1 teaspoon paprika (5 grams)
- Salt and pepper to taste
- 1 medium red onion, chopped
- 2 medium carrots, sliced
- 1 bell pepper (any color), sliced
- 2 cups broccoli florets (about 150 grams)
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, drizzle the chicken breasts with olive oil. Season with garlic powder, paprika, salt, and pepper, and toss to coat evenly.
- On a large baking sheet, spread out the chopped onion, carrots, bell pepper, and broccoli.
- Place the seasoned chicken on top of the vegetables on the baking sheet.
- Squeeze the lemon juice over the entire dish.
- Transfer the baking sheet to the oven and bake for 30-35 minutes, or until the chicken is cooked through and vegetables are tender.
- Remove from oven and let it rest for a few minutes, then garnish with fresh parsley before serving.
