Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon garlic powder (5 grams)
  • 1 teaspoon paprika (5 grams)
  • Salt and pepper to taste
  • 1 medium red onion, chopped
  • 2 medium carrots, sliced
  • 1 bell pepper (any color), sliced
  • 2 cups broccoli florets (about 150 grams)
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, drizzle the chicken breasts with olive oil. Season with garlic powder, paprika, salt, and pepper, and toss to coat evenly.
  3. On a large baking sheet, spread out the chopped onion, carrots, bell pepper, and broccoli.
  4. Place the seasoned chicken on top of the vegetables on the baking sheet.
  5. Squeeze the lemon juice over the entire dish.
  6. Transfer the baking sheet to the oven and bake for 30-35 minutes, or until the chicken is cooked through and vegetables are tender.
  7. Remove from oven and let it rest for a few minutes, then garnish with fresh parsley before serving.
