Ingredients:

  • 4 (6-ounce/170g) tilapia fillets, skinless
  • 2 tablespoons/30ml olive oil
  • 2 tablespoons/30ml lemon juice, freshly squeezed
  • 1 tablespoon/15ml melted unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (or a mix of oregano, thyme, rosemary)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, thinly sliced
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, lemon juice, melted butter, minced garlic, Italian herbs, salt, and pepper.
  3. Place the tilapia fillets in the baking dish.
  4. Pour the lemon herb sauce over the tilapia fillets, making sure they are evenly coated. Top each fillet with a couple of lemon slices.
  5. Bake for 12-15 minutes, or until the tilapia is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. Garnish with fresh parsley and serve immediately.
