Ingredients:
- 4 (6-ounce/170g) tilapia fillets, skinless
- 2 tablespoons/30ml olive oil
- 2 tablespoons/30ml lemon juice, freshly squeezed
- 1 tablespoon/15ml melted unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs (or a mix of oregano, thyme, rosemary)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, thinly sliced
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, lemon juice, melted butter, minced garlic, Italian herbs, salt, and pepper.
- Place the tilapia fillets in the baking dish.
- Pour the lemon herb sauce over the tilapia fillets, making sure they are evenly coated. Top each fillet with a couple of lemon slices.
- Bake for 12-15 minutes, or until the tilapia is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Garnish with fresh parsley and serve immediately.
