- 1/2 cup (120 ml) fresh lime juice (about 4-6 limes)
- 1 cup (150 g) diced cucumber
- 1/2 cup (75 g) diced red onion
- 1/2 cup (75 g) diced red bell pepper
- 1-2 serrano chilies, finely chopped (adjust to taste)
- 1/4 cup (5 g) fresh cilantro, chopped
- Salt to taste
- Tortilla chips or tostadas for serving
- Avocado slices (optional)
Instructions:
- Prepare shrimp: If using raw shrimp, blanch in boiling water for 1-2 minutes until pink, then plunge into ice water.
- Chop the vegetables: Dice cucumber, red onion, and bell pepper; finely chop serrano chilies.
- Mix ceviche: In a bowl, combine shrimp, lime juice, cucumbers, onions, bell peppers, chilies, and cilantro.
- Season: Add salt to taste, mix well, and adjust lime juice as needed.
- Marinate: Cover and chill in the refrigerator for 30 minutes to let flavors meld.
- Serve: Spoon ceviche onto tortilla chips or tostadas, garnish with avocado slices if desired.
