Ingredients:

  • 1 pound (450 g) shrimp, peeled and deveined
  • 1/2 cup (120 ml) fresh lime juice (about 4-6 limes)
  • 1 cup (150 g) diced cucumber
  • 1/2 cup (75 g) diced red onion
  • 1/2 cup (75 g) diced red bell pepper
  • 1-2 serrano chilies, finely chopped (adjust to taste)
  • 1/4 cup (5 g) fresh cilantro, chopped
  • Salt to taste
  • Tortilla chips or tostadas for serving
  • Avocado slices (optional)

Instructions:

  1. Prepare shrimp: If using raw shrimp, blanch in boiling water for 1-2 minutes until pink, then plunge into ice water.
  2. Chop the vegetables: Dice cucumber, red onion, and bell pepper; finely chop serrano chilies.
  3. Mix ceviche: In a bowl, combine shrimp, lime juice, cucumbers, onions, bell peppers, chilies, and cilantro.
  4. Season: Add salt to taste, mix well, and adjust lime juice as needed.
  5. Marinate: Cover and chill in the refrigerator for 30 minutes to let flavors meld.
  6. Serve: Spoon ceviche onto tortilla chips or tostadas, garnish with avocado slices if desired.
